Main Course
Ingridients:
3 teaspoons of industrial husked hemp seeds
1 teaspoon of hemp oil
salted hemp
mushroom powder of mixed forest mushrooms
100 g rice
100g buckwheat porridge
400 ml of water
1 fresh red pepper
lemon juice
parsley
a pinch of garlic
laurel
Preparation:
Wash and drain the buckwheat and rice before cooking. Cut the peppers into small pieces. All ingredients (powder of mushrooms, rice, buckwheat, red pepper, garlic, laurel, chopped marjoram) are cooked in salted water. Cook until the water evaporates (approximately 15 to 18 minutes). Before serving mix oil, parsley and husked hemp seeds. Add lemon juice. Finally, add a tablespoon of sour cream or cottage cheese.
P.S. * In the dialect, buckwheat porridge in Prekmurje (SV Slovenija) is called "hajdina".

KONOPLJA V ORKESTRU Z MEŠANIMI GOBAMI, RIŽEM, AJDO …
Sestavine:
v oluščena konopljina semena (3 žličke)
v konopljino olje (1 žlička)
v konopljina sol (ščepec)
v gobji prah mešanih gob (2 žlici)
100 g riža
100 g ajde
400 ml vode
1 sveža rdeča paprika
sok limone
ščepec peteršilja
ščepec česna
ščepec majarona
1 lovor
Postopek:
Pred kuhanjem ajdovo kašo in riž operemo. Pod tekočo vodo izplakujemo toliko časa, da izpod cedila priteče bistra voda. Riž in ajdo odcedimo. Na drobno narežemo papriko. Vse sestavine (gobe v prahu, riž, ajdo, papriko, česen, lovor, majaron) zavremo v osoljeni vodi. Med počasnim mešanjem kuhamo toliko časa, da voda izpari (približno 15 minut). Pred serviranjem vmešamo 1 žličko olja in oluščena konopljina semena. Po okusu okisamo z limoninim sokom. Na koncu dodamo lahko žlico kisle smetane, skute ali sira po okusu.
P.S. V ajdi se nahajajo škrob, proteini z visoko biološko vrednostjo, antioksidanti, prehranska vlaknina, minerali, kalij, fosfor, magnezij, železo in vitamini. Ajda je zdravo, okusno in večnamensko živilo, ki ne vsebuje glutena, zato jo primerna za brezglutensko dieto obolelih za celiakijo.
*V narečju pravijo ajdovi kaši v Prekmurju »hajdina«.
